Speedy Suppers: Skillet Lasagna

Cheesy, rich and delicious.

Whether it's covered in red sauce, white sauce or anything in between, we're fans of all fare from the boot-shaped country. My boyfriend, Fred, lived in Naples as a kid and his mom cooks some really delicious, authentic meals. When he makes dinner, it's usually some sort of pasta dish.
Unfortunately, Italian favorites like spaghetti and meatballs or lasagna are fairly time-consuming for a weeknight meal. They're pretty heavy, too!

I came across this popular dish on SparkRecipes: Skillet Lasagna. It takes just under half an hour, instead of an hour or more like regular lasagna. A perfect addition to our Speedy Suppers blog series. Seems like a keeper to me! Plus, it has only 336.5 calories and 10.6 g fat and serves six. Leftovers--yeah!

We'll be making some modifications to this recipe in our flexitarian household, but the versatility is one of the advantages of this dish. Here are some tips to modify this recipe for your family.

  • Swap ground turkey for the beef and save about 22 calories, 8.7 grams of fat, and 6 grams of saturated fat per serving.

  • Use low-fat or regular cheeses if you're not a fan of fat-free dairy.

  • Saute veggie "meat" crumbles or mushrooms instead of beef.

  • Add a few handfuls of fresh spinach or a 1 cup of chopped frozen spinach.

  • Add diced or shredded zucchini to the sauce.

  • The possibilities are endless!

1 lb lean ground beef
1 small onion (chopped)
3 cloves garlic (minced)
1 can diced tomatoes (undrained)
1-1/4 cup water
8 oz tomato sauce
1 tbsp dried parsley flakes
1 tsp dried basil leaves
1 tsp dried oregano leaves
1 tsp salt
2-1/2 cup broken up whole wheat lasagna noodles
1 cup fat free cottage cheese
1/4 cup fat free grated Parmesan cheese
1 egg
Shredded fat free mozzarella cheese for garnish

In a large skillet, brown beef with onions and garlic. Drain.

Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt.

Stir in uncooked pasta.

Bring to a boil, stirring occasionally.

Reduce heat, cover and simmer for 20 minutes or until pasta is tender.

Combine cottage and Parmesan cheeses.

Mix in the egg.

Sprinkle in basil and pepper to taste.

Drop cheese mixture by rounded tablespoons onto pasta mixture.

Cover and cook for 5 minutes more.

Sprinkle with shredded mozzarella and serve.

Whenever I've made regular lasagna I usually leave the egg out, and that can cut some extra calories. Usually the egg is to make ricotta cheese easier to spread, I also think it makes it "fluffier" or something, but really doesn't add to the flavor of the lasagna itself. Plus, cottage cheese is a lot easier to spread than ricotta cheese anyway, so you could probably just omit the egg and never know the difference. Report

I have seen this recipe on the spark site and think it looks like a good pasta dish. I don't bother making pasta anymore, too much trouble but this looks good.

I don't think it would come out looking like the photo on the blog, though, which is a picture of traditional baked lasagna, but I still think it is a good recipe. Report

This recipe, actually this concept is new of cooking lasagna on a skillet, is new for me. Though I never had it before, I remember growing and thinking if there was a quicker way to make lasagna other than buying it premade at the store. I'll have to see about trying it one day. I've made a recipe similar to this but I use ready to cook lasagna noodles by Barilla. They cook faster and don't need boiling so they don't soak up so much of the sauce and it stays nice and moist. Report
Looks simple and delicious! I am going to cook it for my daughter and her friend this weekend. One question- the picture shows a layered lasagna, but the recipe calls for breaking the pasta into pieces and adding the cheese mixture of top -right? Does the cheese melt down into the sauce and thicken it? Report
Oh ... and I completely agree with KATANA_X ... using your own sauce always makes any Italian dish better. I don't buy processed/premade foods, so I always use my own "homemade" when "jar" sauces or boxed ingredients are called for in recipes. That way I control all the ingredients and homemade always tastes better. Report
I have made this recipe. The first time I made it I followed the recipe and it was less than great for my family. The uncooked pasta absorbed all the moisture in the dish so it was dry. The next time I made it I made some alterations - boiling the pasta first and then adding to the skillet, using skim ricotta cheese, using ground turkey instead of beef and adding mushrooms and spinach and finishing it with parmesean or romano cheese ... and it was amazing. This is definitely a SUPERB SUPER SIMPLE SUPPER ... and I highly recommend everyone who loves lasagne but hates the long prep time to try this dish! Report
I'm from an Italian-American family so it's hard for me to accept a sauce that wasn't made from my grandmother's recipe and cooked slowly for three days.

This, however, I can get behind. It won't be the same but it looks delicious, so it's worth a shot. Report

I just saw this recipe on Spark a few days ago, and added it to my recipes. I think it will be good, and I like the idea of not having to heat the oven up in the summertime. The recipe sounds good and easy to make! I am not much of a cook (hubby does most of the cooking) but I am willing to try it and see how it comes out the only time we have lasgna is if someone else makes it and I love it but don't think hubby likes it that much. More for me ! Report

Oh love it, I used whole wheat shells and gnd lean chicken my own tomatoes I put up in the freezer last summer (last bag). I always double it & freeze the leftovers. I was a bit lazy & done it in the crockpot!! Report

Gotta try this! I've seen other skillet lasagna recipes but nothing like this one. I'm going to stick to the 97% lean ground beef I've been using. It's so lean I have to coat the skillet with c/o spray! My daughter will love this. She's like Garfield when it comes to lasagna! Report

If you really like turkey flavor better than beef, okay, but for nutrition sake, beef seems to fare a bit better. Beef is always getting the bad rap so just wanted to say something on behalf of beef ranchers. Report
Oh yum! I have been wanting a tried & tested, healthier version of lasagna to add to our supper rotation . . . the easy prep of this one is a bonus (hubby may even try his hand at it)! We will be giving it a try next week. I don't see any modifications necessary . . .
