Thanks for the comment! I never found South Beach tooo difficult either, I usually stick to Phase 1 for longer than two weeks, I guess this time around I'm just having problems sticking with it. I teach preschool so I'm surrounded by junk food... giving in to temptation is tough for me! My staples are turkey, eggs, cheese (low fat of course!) and lots of veggies. Lately I have been loving "taco" salads with lean ground meat and refried beans. I'd love any recipes you have- I could definitely use some yummy breakfast ideas!
