    You need quite a bit of sweetener to make it work with rhubarb. I use Splenda because it's heat-stable (can take the heat of cooking without decomposing), unlike Equal. Don't know how stevia handles it. But I also wait until the end to add it too. I also put cinnamon in if I'm making sauce.

    The rhubarb is done as soon as you can start breaking apart the bigger chunks with the side of your fork against the side of the pan. At that point it is not mush. Cook for a while longer, and it becomes mush.
