I love eggplant too! What I do is very simple. I don't really have a recipe, per se but...
I take 1 medium eggplant, peel & cut into 1 inch or so cubes, 4-6 roma tomatoes, cut up in to big chunks, 1 medium onion, chopped, & 3 cloves of garlic, minced & toss all ingredients into a large skillet. I drizzle olive oil over the the whole thing. Salt & pepper to taste...then sprinkle a generous amount of McCormick's California Style Garlic Pepper over it all. Simmer until eggplant is soft & tomatoes are broken up. I don't have the caloric info on this, and just use something similar from another member to add to my tracker. I use 1 cup at a time until it's all gone! FYI: it always tastes better the second day...& it microwaves easily!
