    I just returned from my two-week vacation to New Orleans to find your recipe request to me from...2 weeks ago! Yes, it is Keto-friendly -- my green chile is not so much a recipe as it is a list of ingredients. This is my way of saying it is very easy to make and is very flexible.
    You need a pork shoulder-butt roast, green chile poblanos (make it easy on yourself and just buy a 1-pound package or 2 of this frozen), fresh hot green chiles to spice it up to your preferred heat level, some tomatillos if you can find them ( I prefer to use 2 parts green chile to 1 part chopped tomatillos [~ 1" chunks] ), 1-3 t ground cumin, 1-2 t salt, pepper or hot sauce, a can of chicken broth if needed, a bunch of cilantro (optional), a can of diced tomatoes (optional), and if you have it --- a keto-friendly thickener of your choice like xanthan or guar gum, powdered tofu, flax meal, even a bit of coconut flour.....
    Anyway, using your favorite reliable method, cook your pork roast until it is so tender you can shred it with two forks. I prefer using my slow cooker (to cook the meat with the can of tomatoes) or Instant Pot (to cook the meat with 1 can of chicken broth). Meanwhile, remove husks from tomatillos and rinse and rub under water (NO SOAP!) to remove all their stickiness).
    Once cooked, remove and shred the meat (and don't you dare discard any liquid!) To all the pot liquor (the liquid I just told you not to discard!) add all the veggies except cilantro, and spice it up to taste. Simmer GENTLY over low or medium-low heat with as much more chicken broth as you'd like (green chile can be soup-like or stew-like) until the tomatillos are ALMOST as tender as you'd like them to be. If you feel compelled to stir the pot, stir gently! The green chiles are already extremely tender and rough handling (too high heat or fast stirring) will cause them to disintegrate, Personally, I like my tomatillos to be firmer than the chiles.
    Return all the meat and fat to the pot and continue simmering until the tomatillos are as tender as you want. Stir in a little thickener and the chopped cilantro. Adjust seasonings to taste. Serve hot with dollops of sour cream, grated cheese, and/or keto-tortillas.

    Even though chile peppers and tomatillos are very low carb, the fact that this is called green chile should tell you that there is a high percentage of veggies in this dish (and all those little bits of carbs add up!) So, I make it with a lot more pork than I usually would -- usually 2-3 pounds. And clearly, I also keep all the flavorful fat in -- and serve it with more fat! Actually, you can skim off as much fat as you want to get rid of, or serve it plain without the garnishes.... As I said, it is a very flexible recipe!
