Thank you so much for friending me. I don't get over to the teams as much as I would like to. Yes, it looks like I may have another friend here in Santiago, I am hoping we can meet for coffee, it will be nice to chatter in English!

Pesto the easy way (Louie's way)
Louie is my 92 year old Italian Dad

Fill a large bowl - he used the large tupperware colander with Basil leaves.
Lightly toast some pine nuts - I used 1/2 cup to one colander of Basil.
(watch toasting them - they can go from toasted to burned in a blink) Sam's club has large bags of the pine nuts which may be cheaper than the little dinky bags in the grocery store.
Clean about 3 cloves of garlic more if you like lots of garlic -
    Some olive oil.
Put your Basil in a food processor - I rinsed and blot dried mine, but I don't think Daddy ever did rinse. Pulse the blade, as it starts to chop it up toss in the pine nuts and garlic, slowly drizzle the olive oil, it really helps it get moving and blending. I didn't measure but don't think I used more than 1/4 cup.
Now if you put it in a jar in the fridge make sure you get out all the air pockets and pour a layer of olive oil on top - or you may get some mold on it - there are no preservatives. In the past we've just scraped the part with the mold and tossed it and used what was below - but good layer of oil should prevent that.
My sister says she puts hers in one of those screw top ziplock jars and puts it in the freezer, you don't need that oil layer then. If you do that I needed two batches to fill that jar. This is my first summer making it and only made my second batch today - used too much garlic - 5 cloves last week - but it was good as a marinade for chicken tenders on Sunday.
Good Luck and let me know how it comes out.
I like to use it more to add to stuff or to marinade meats and then saute them. I especially like to saute fresh mushrooms in a little wine and add about 2 T of pesto and put all that on top of some whole wheat linguini. MMMmmm.
