    Black garlic is garlic that has been kept in low temps for as much as 90 days Thus it ferments. All this turns it black.. It is not smoked! It takes on the texture of fig or prune or large raisin. Now it is used as a garnish in salad or on top of soup, potato, etc. It is not longer suitable to use for cooking. My personal belief is to use only organic if a food is used for a health purpose . You can go on line to find ways to make your own or order. I use to get mine from an organic farmer at a farmers market. Now I get it from a company that is in California. It has a high rating. Even though the garlic taste is there, it is very mild. Does not burn the mouth as the original form does . Not able to find another grower and was not satisfied when found on the counter. Was really apprehensive about quality and how grown. I dont like garlic but absolutely love it in this form.
