I just made a HUGE batch of super healthy Pad Thai and it's AMAZING!!! I didn't eat great this weekend so I want to double up on my veggies this week.
High fiber english muffin with one egg, avocado and a drizzle of chili oil!
After snacking on too many Ritz Thin Crisps, I needed a light and fresh dinner: spaghetti squash with blistered tomatoes, red onion, garlic and a sprinkle of fresh Parmesan!
Rich, fudgey, chocolatey, black bean brownies! I was craving chocolate but wanted something high fiber, low-carb and made without sugar or flour. Soooo good!
Dinner: Romaine topped with crispy air-fried tofu, roasted asparagus, roasted carrots and a tablespoon of light raspberry vinaigrette. So good!!!
I'm seriously so lucky to have the friends and family I do! My mom's friend knows I'm a vegetarian and knows I'm eating healthy so for our monthly dinner he made homemade vegetarian tortilla soup (a healthy version) and Caesar Brussels sprouts salad. It was phenomenal and I even had enough calories leftover for a few ounces of merlot 🍷
Asparagus grilled with EVOO, whole rosemary and fresh pepper...crispy air fried tofu with avocado and a tablespoon of sweet & spicy Thai chili sauce 😍
Keeping it light today since tomorrow is weigh-in day! Spring roll wrapper with 1/4 c. edamame, 1/4 of an avocado, a few leaves of romaine and a tablespoon of Thai chili sauce for dipping 😊

I did it! I ordered a salad instead of fattier foods when I went to dinner. Lettuce, tomatoes, onion, mushrooms, cukes, chickpeas and chopped egg. The only unknown was the dressing, so I just calculated it on the high side. I can enjoy my mac ‘n cheese tomorrow with zero guilt!!!

Two workouts in the books for today. We were up really late watch game 5 of the World Series so after eating this delicious, clean salad, I’m having some Sleepy Time tea and hitting the sheets! 😴
Big day of healthy cooking! I love having a freezer full of healthy, organic, homemade food! I made quinoa “meat”balls, Tuscan kale tomato sauce and vegetarian tortilla soup! 💕
😍😍😍 I made the best Buddha Bowl!!! Romaine, spiced roasted chickpeas, Tori-color quinoa, avocado and a drizzle of red pepper sauce...all homemade. Soooo delicious!
The picture doesn’t do it justice. What a gorgeous sunrise! I’ve been stressed and lax on my weight loss game lately, and this beauty reminds me why I need to get healthy. So, the small amount of junk I bought last night is now in the trash and I’m getting ready to workout with my husband when he gets up. I hope everyone has a wonderful day and is reminded in some small way of why they are on this journey.

Treating myself to an afternoon snack plate: 1 tablespoon of raw pumpkin seeds, 1/2 of a honey crisp apple, and 1/2 ounce of really expensive aged cheddar. I buy the expensive stuff because it’s super sharp but it also prevents me from overeating it :)

We’re pregnant with our first (and only) baby! We couldn’t be happier and it’s giving me the motivation I need to continue being the healthiest version of myself! Because I’m still overweight, my doctor said I can safely continue to lose weight as long as I’m getting moderate exercise and eating a nutritious, organic diet. I’m almost 8 weeks, no morning sickness but some food aversions. Feeling great and looking forward to continued support and motivation from SparkPeople!!!

I haven’t posted in a while but I’m still going strong! Baby Oliver is doing great and we’re more than halfway there! I’m eating a healthy diet (and indulging when necessary, of course) and sticking to a great prenatal workout program that incorporates yoga, cardio and weights. My weight gain has been very minimal (which is what my OB wants) and my husband is being a saint! I seriously couldn’t ask for a more loving, healthy and supportive environment for us!
Currently recovering from an emergency c-section but I’m looking forward to losing weight and starting to exercise when the doctor gives me the all-clear! Our little one is so worth it though...he’s so cute!
6 weeks and 2 days postpartum (c-section) and I’m finally back at it! Re-starting my weight loss journey a pound less than my pre-pregnancy weight! I did say 3 of the 21 Day Fix today...and boy is it harder than it was pre-preggo! 🤣🤣🤣 Aiming for a reduced-carb diet, except for quinoa and sweet potatoes to give me energy to keep up with a moderately colicky little boy! I’m doing the SAHM thing so I’ll be on this board a lot for support and motivation!
Super proud of myself for staying on track with both food and exercise despite having a colicky baby at home! Even when he’s howling and driving me a wee bit insane, I take one look at him and remember that he’s one of my biggest motivators ❤️
The husband is in bed after taking the overnight shift with our baby boy, the baby boy is actually napping (stupid 4 month sleep regression!), and mama is sitting down to a beautiful southwest omelet after making healthy broccoli cheddar soup for the week 😍
Not too shabby considering I squeezed it in while during a couple of the baby’s power naps! It may not be as intense as I typically prefer my workouts to be, but it’s exercise and will help me reach my goals 💪💪💪
I don’t usually eat bread during the week (even a small amount messes with my weekly weigh-in) but a teething, miserable baby, a snowstorm and too much family drama had this mama craving some comfort food. This fit in with today’s calories perfectly: a slice of whole wheat toast, 1/4 of an avocado and a drizzle of spicy chili oil 😍😍😍 I seriously needed this today!
Healthy eating is dangerous 🤣🤣🤣 I rarely use my cast iron skillet and accidentally burned the $hit out of hand by grabbing the handle. At least the crustless quiche I made for this week’s breakfasts turned out amazing!
These cauliflower sandwich thins are a game changer! Used them for my veggie burger and I couldn’t have been happier! Doing low-carb, I was worried how I’d handle grilling season (I’m sorry, but it’s not the same using lettuce or just eating it with a fork, in my humble opinion). I’m really excited to use these this season!
#BeforeAndAfter 50 lbs down as of this morning! Still have more to go, but I feel amazing! This is the second time I’ve lost significant weight and I will not be doing this a third time! These changes are for life!

My husband suggested putting up a picture of myself at my heaviest (50 lbs ago) on both the pantry and the fridge as a reminder to stop mindless nibbling. This is exactly what I needed! And yes, that’s a picture of Dr. Now 😂😂😂
Homemade lettuce wrap for lunch. It’s stuffed with avocado, roasted red peppers, marinated portobellos, cucumbers and spicy mustard. The perfect lunch for the day before weigh-in!
