Just found another perfect use for Laughing Cow Light (this time, I think the flavored ones would be good too). I bought Ryvita Rye and Oat Bran crispbreads at the health food store last week. I like cracker-ish things to put salmon on (I like the Chicken of the Sea Cups) for my lunches. By themselves they taste...well, like grainy cardboard.
Miraculously, though, if you add a wedge of Laughing Cow, it's positively yummy and decadent tasting, for a total of only 70 calories. There are 2 g of fiber in the crispbreads, too.
For the Weight Watchers among you, one slice of the crispbreads count for no points at all. And, of course, the Laughing Cow is only 1 pt. per wedge. So it's a very filling little snack that gives you good nutrients and few calories.
