now what to do

Now we are going to be stuck between a rock and a hard place! My husband got laid off this week so now we are not going to be able to get all the foods we used to to help keep us on track. Neither one of us have been in this kinda situation before (damn recession!) If anyone has any cheap and easy GOOD FOR YOU recipes please share them with me. Thanks. It's been a bad week for both of us. We've not been concerned at all with watching what we eat and both kind of reverted to food being a comfort. We had Pizza and chinese food and hotwings. We are starting over today for it's technically the start of a new week. I just pray that things get better. We were strapped for cash as it was but now with him loosing his job i'm not really sure what's going to happen. If you could please send a little prayer our way. Actually i will ask for this instead. Please send a little prayer out in general for all the people loosing their jobs, that they find new ones.

    I Feel for you guys! My husband has been laid-off for almost 9 months now. His unemployment is running out and there doesn't seem to be any jobs for him here in KC. The best economical food advice I can give is that we often buy a roasting chicken (whole & best if you can get it thawed) if not thaw in in your fridge. it's about $3-4 and we put it in the crock pot. Have hot Chicken that night. Then after dinner(and the chicken has cooled down enough to handle) I take all the rest of the meat off the bone and put it in the fridge for at least 2 more meals. I also save the chicken broth & freeze it for future cooking. We also have been doing 2 veggi only meals a week which has saved some money.

    So sorry to hear about this! What an awful week it must have been. I'll definitely be keeping you in my thoughts & prayers. Good job on starting afresh. You definitely deserved some time to crash and recuperate but I'm sure things will soon be getting back on track.

    As for recipes, I'm not much of a cook. Do you happen to live near an ALDI or similar store? I love ALDI, it makes it so much easier for me to buy produce and save money. They have a website dedicated to inexpensive meals, and lots of them are healthy (you can actually search by "low calorie" "low fat" etc. if you'd like) - http://www.aldimeals.com/ . I hope it's helpful for you! Feel free to message if it you ever need a buddy to vent to or share what cool recipe you found with. :) Best of luck!
