Not much new to say. Still in ketosis and spend the evening prepping for the week. I was not a happy camper to open the lettuce drawer to find orange lettuce!! :( Oh well, the taco meat that I had already cooked went into 4 freezer containers and that's one less thing I have to do another day. I will get some lettuce on my day off Wednesday.

I roasted a chicken for dinner. I had one of the breasts and both wings, which I dipped in blue cheese dressing :) and some leftover green beans. I also cooked some keilbasa and bacon. Keilbasa isn't the best choice, but it's way lower carb than pasta or poatoes ;)

The bacon I will use for a savory ricotta breakfast. It's about 1/4 C of ricotta mixed with diced or shredded cheddar (a few tblspns?) and some crumbled bacon - probably 2 or 3 slices. Mix it up and nuke it so the cheese is melty. Yum!

I also picked up a small container of cottage cheese. My fluff friend said she uses cottage cheese and mixes a packet of jello with it and it's not grainy like my concoction the other day, but I think I will just use it as a savory snack with some pepper sprinkled on top. I just ran to the Dollar store today to pick up a few things (no grocery store in town and I didn't feel like going to the next town over just for a couple of things - didn't know about the lettuce situation at that point. grrr) Anyway, they didn't have any heavy whipping cream, so I think I am going to have to settle for making some SF pudding with regular milk - or I just might wait until I get to the store. We'll see. Anyhow, that was pretty much my day from a low carb standpoint. I sure do get thirsty...like right now! It's a good sign :)

Time to get some water and go relax for a while. I'm tired of studying. So there! :p

    Thanks for asking. I have always followed Atkins and stuck closely to induction levels, but I can't say that this is truly Atkins because I do eat things like carrots and apples in small amounts and those things are incorporated in later stages of Atkins. Mostly I am staying away from sweets, pasta, bread, potatoes and anything with white flour in it.
