The Lunch Lady

After re-reading my introductory page I thought I would give an update. I've had some challenges that included my own lack of motivation. Somethimes it's so difficult to resist the food that we serve the kids. I know that there are dietary guidelines for school lunches but lets face it - chicken nuggets aren't the most nutritious. I also have a weakness for the spaghetti, for the mashed potatoes, for the tacos. My biggest problem has been planning for the week so I can either resist or build in the food that I have the worst time with. I'm happy to say that I've had a great week so far and I'm planning on having more of the same great week. Eyes on the prize!

    Is there a way to combine the things you like from the school with some healthy options?

    What I mean is, if you like the taco's - maybe you chould bring in a salad and just use the taco meat in your salad and make a salad (heavy on the veggies) for lunch. Use some not-bad-for-you salsa (low fat, low sugar, home made, whatever!) for dressing, and it could be yummy! You could even crumble up one taco shell on top (there must be shells that are destroyed in the package, right? You chould use those instead?)

    For things like mashed potatoes, I would guess that portion control would be key. 1/2 a cup or a 1/3 cup of potatoes with some lean meat and fresh veggies.

    I know the goal is probably to eliminate those kinds of food completely, but if you think that just cutting back to begin would help, then those are my ideas. I am a firm believer that restricting yourself too much too fast can lead to binge eating/unnecessary eating to just fix a craving.

    The kids at school don't always eat the fruit and veg that have to go on their lunch tray. I keep a fruit bowl at home that my kids get into every day in hopes of counter balancing some of the more dubious choices that are made during the day! Thanks for writing! I can use all the encouragement I can get!

    I don't envy your position, working with food. Not the best food at that. Makes me realize how what we feed kids at school can set them up for a lifetime of being willing to eat food that is not as good tasting, good nutritionally as it should be. I have always tried to teach my kids, and grandkids to eat food that is good quality. Very little in the way of frozen, prepackaged, tasteless stuff. I am not sure I ended up having that much impact. But I still stick to it and maybe someday they will all come back around.
