Today I made up a double batch of yogurt fluff and it got me to thinking that I should share this family favorite recipe with my Spark Friends. My DH and I eat most all our meals at home and one thing that I always try and do afer lunch and dinner is serve dessert, I try and keep it to under 100 calories but I always feel like I'm "living large" if I have dessert. I have made Yogurt Fluff for over 20 years and we never get tired of it. The calories will vary depending on the toppings you add, but keep it modest and you will be under 100 calories.
6 serving package of Sugar Free Jello Gelatin (any flavor)
8 ounce container - Fat Free Plain Yogurt
1 tsp. vanilla extract
Water and Ice Cubes
Put 1 1/2 cups boiling water in blender. Add jello gelatin and stir then blend for 1 minute until fully dissolved. Add 2 cups ice cubes to blender and stir until almost dissolved. Add vanilla and yogurt then blend for 2 minutes. Pour into 6 footed wine or martini glasses (or other dessert dishes as you prefer), cover with saran and chill until set ~ usually 2-3 hours. Serve with your choice of toppings such as sliced banana, raspberries, sliced strawberries, fat free cool whip and dust with toasted coconut, slivered almonds or other chopped nuts. Enjoy!
