Pumpkin Banana Muffins

Okay, first clean-eating muffin experiment! I have been playing around with some recipes so I can find some that are as filling as a VitaMuffin. I have made many tasty ones, before I was even worried about eating clean, but none of those stuck with me for as long as a VitaMuffin!

So I started with a pumpkin banana muffin. It sounded like an interesting enough combination.

I started with my dry ingredients
1 cup whole wheat flour
1/4 cup all-purpose flour
1/4 cup ground flaxseed
2 teaspoons baking powder
1/2 teaspoon cinnamon

Then mixed up my wet ingredients
1/2 cup canned 100% pure pumpkin
1/2 cup 100% egg whites
200 grams (7 ounces) banana
1 teaspoon vanilla

Then of course, you mix the two together.

I portioned it out into eight servings. Although I think the picture looked better with just the muffin pan that was filled all the way up! =)

They baked in my oven at 375 for 23 minutes. I figured they would need at least 20 minutes, but when I checked they needed those few extra minutes before a toothpick came out cleanly.

Taste = yummy Texture = awesome

Filling? We’ll see. I will be having one for breakfast tomorrow morning. I didn’t want to try this morning since I work and don’t have easy access to more food if I’m still hungry!

I sometimes have to sneak bites at work because I just can’t go that long without eating again, but it’s hard when I’m with older kids (I work in a child care) because if they see me I have to deal with “Hey, what are you eating?” “When’s snack?” and/or “I want some!” So I have to be pretty sneaky….

    This is my favorite muffin recipe to make. I don't remember how filling they are though. I don't think they are super filling, but they are delicious for a snack. (Wonder what I could add to make them more filling.) I usually omit the nuts, and sometimes play around with the fruit. Instead of apple I might use blueberry or something else. Hubby loves them too.
