What? Collard Greens That Aren’t Bitter!

Aubrey called Blossoming Lotus ( www.sparkpeople.com/mypa
) for me to find out what greens their wraps are made out of. And they said what we thought: collard greens. We had bought some and they were the bitterest things I had ever eaten.
So I was very confused as to what they did at Blossoming Lotus to take away the bitter flavor. Especially since they were supposed to be raw wraps. Maybe they dehydrated them? I’m really not sure. I used Blackle.com and searched and searched for various ways to make the greens more palatable.

I started with three leaves and cut the middle rib out to make them bendable.

While I was getting those ready I set some water on the stove to boil. I read websites where people put different herbs to infuse the flavor into the leaves while some people just cooked them a bit alone in the water. I wanted to try just cooking them a bit as my first experiment.

I dropped the leaves into the water for maybe 10 seconds a piece. Just enough time for them to turn an intense green color. Also, while I had been waiting for the water to boil, I diced up the veggies I wanted to put in my wrap.

When all three leaves were done I laid them out and topped them with a cup of veggies and a 1/4 cup of hummus.

I folded over the top, then the two sides, and finally wrapped up the bottom to form a wrap.

On the side I had an ounce of FSTG chips, Olive flavor. And it was actually surprisingly filling! I usually use a high fiber/protein whole wheat wrap for this meal, so I figured I wouldn’t feel as satisfied after this meal. I only felt satisfied by the wrap at BL for about two hours. So I was surprised that I was full for about three and a half hours! I think the chips definitely helped complete the meal.

I don’t think this is what BL did to their wraps, because it was stringier than I would have liked, but I was just glad that the taste wasn’t awful.

I love it when experiments WORK!

    Iew, I think I shall have to pass on this recipe. The filling did look good though. I like broccoli :)
