Yesterday I had a Yelp event to go to at an Italian restaurant I've been meaning to try for a while. There were going to be light appetizers and free wine. I figured I'd eat whatever the lowest-carb item is, and have one glass of wine. I ate very low-carb all morning and afternoon, and by the time the event came around I was totally ready!
The food options were polenta fries, eggplant parmesan, and garlic knots. Well, obviously the garlic knots were a big no-no. White flour = no! I ended up going with eggplant parmesan even though I never was a fan of eggplant. The way these were prepared was one very very thin slice of eggplant wrapped around cheese, baked, and covered in sauce. I grabbed 4 of those and loved it! I don't like tomato sauce so I scraped it off and all I was left with was delicious (yet very thinly sliced) eggplant and cheese. Uh, yum!
I ended up having one polenta fry (it was really yummy... I love polenta!) and two glasses of wine and felt so surprisingly satisfied! When I got home I plugged it all into my tracker and found I'd barely eaten 1300 Calories the whole day. Whoops! Funny how full I get from eating lots of greens, protein, and fat!
So far today has been just fine, as usual. I made yet another delicious lettuce wrap: this time it was filled with a tex-mex style salad consisting of avocado, salsa, cilantro, lime juice, and beans. So much fiber and flavor! Followed up with my final cup and a half of raw mushroom slices and I was stuffed!
Tonight I have a party to go to and, as usual, I'm baking dessert. My dessert will NOT be very low-carb, haha. I'm planning on making cupcake cones - baking cupcakes inside a cone and decorating it with frosting to look like ice cream. I've always seen these being made but never made one myself. I'm excited to try it! I will be making the cupcake batter using the box of mix + diet cola trick so I will cut back a little on the sugar. Cake cones don't have much sugar or Calories in them. The only carb culprit will be the frosting, but I'm currently investigating some low-carb frosting recipes and may give them a try. We'll see!
