Changes in Thinking - "decadent dinner"

What a difference in my thinking nowadays. Having been doing my own shopping, cooking, all my own meal planning and prepping, I have tried new things, I have added fruits and vegetables to nearly every meal, and I am working on sneaking more vegetables into things as well. Mincing up peppers and onions to sneak into rice, and finding other ways to just add different nutrients, since I eat so few things.

Today, a friend mentioned her dinner of Chicken Fettucine Alfredo. Oh, there was a time that I would think nothing of a heavy lunch or dinner at Olive Garden, with their chicken fettucine alfredo, a large bowl of their soup, and a ridiculous number of hot breadsticks. I am a self-confessed carbivore, so pasta and bread would be right up my alley!

Instead, with the thoughts of mmmm, fettucine alfredo in my mind, I stopped at the grocery store on the way home, and picked up brand new chicken breasts. Grilling one in a non-stick pan, I was able to get it a little browned, then cut it into strips to make sure it cooked quickly. Boiling up whole wheat spaghetti, and making an alfredo sauce without cream, using milk instead... the sauce clung nicely to the pasta... which had enough heft that you felt like you were eating something more substantial, and the chicken, tossed in with the pasta and 1/3 cup of the sauce. Totally yummy, and my "new" idea of a decadent dinner!
