Rising to the challenge

It's 8pm Sunday night and I've managed to get through another day without going off course. My refrigerator door came off, yes, completely slipped off its' hinges and was just lying there for a whole day. When my friend and her husband came over, he set it on, taped it, and I was good to go for the week. Some stuff, like the eggs and mayo are gonners I'm sure, but I managed to salvage one melon, oranges, and some grapes. I've been keeping my cheese and a few raw vegies chilled in a little cooler bag on my counter top. I change the freezer pack every day and refreeze the used one. Unfortunately, the repair guy didn't have the parts to do the repair work with, so he'll be back by week's end.
So once again I get to make lemonade from lemons. I'm so used to it by now that it hardly phases me anymore. I've turned this into a survival skills challenge. So far so good. My favorite discovery was delicious Weight Watchers frozen yogurts. Yes, 6 oz. cups of flavored yogurt frozen in the freezer half of the fridge. I do 30 seconds in the microwave and they are fabulous. Even joined a Spark challenge to get in my dairy quota for each day. I have lots of powdered milk on hand, so I can make a cup whenever I want, use it for cereal, or dry for coffee creamer. I've been needing to get in more dairy anyway. I should have three servings a day at my age, and now I do.
Sometimes I pick up a BK side salad for lunch w/ Fat free Ranch and mix the dressing with the tuna instead of mayo. That and the serving of croutons, and you've got a tasty meal.
Just needed to blog a bit tonight as a life preserver because I was suddenly feeling HALT.
So good night Spark friends. Hope there's something good on TV to watch while I enjoy another Apple pie flavored frozen yogurt. We'll se what tomorrow brings when it gets here, God willing. emoticon emoticon emoticon
Since I wrote this blog it dawned on me that it wasn't such a good idea to microwave the yogurt cups due to the possibility of the plastic leaching into the food, so now I just take the cup out of the freezer about a half hour before eating it and I think it's probably better that way. Some people microwave plastic, but I usually don't so just wanted to caution my dear Spark friends. emoticon emoticon

    Thanks for the info about the WW frozen yogurts. I'm going to look for them the next time I go for groceries.
    I hope you get your fridge fixed soon - we never know how important things like that are until we don't have one!

    Maybe it's the weekend for refrigerators giving us problems.
    Saturday I went out in our garage to retrieve something and I noticed some black looking liquid oozing from the corner of the freezer door. You know that's not a good sign. Walked to the frig and opened the freezer door. Yep, freezer had gone out sometime Friday or Friday night...Had to stop what I was doing and unload Freezer..Everything was still frozen except for my skinny cow truffle bars and all of my vegetables I had frozen from my garden..BOO HOO. Anyway, didn't lose any meat so that's a blessing. Don't know what's wrong with it will have to call our repairman tomorrow. Frozen Yogurt huh? Might have to give that a try. Night to you too.

    Bless your Heart. . .as You still have a good attitude about your fridge door. I hope you get it fixed very soon! I'll have to try the WW yogurts as the flavors sound yummy and low in calories! I also did to eat more diary as I have a broken bone in my spine. . .I do take calcium daily. Take care.
