Finally getting my eating back on track, now to just fit in some exercise!

I will admit, my exercise has been pretty much non-existent for some time now. Besides some occasional walks with the dog, roller blading sessions and walks around the mall, I haven't made the time to get back into a schedule.
We are back in colorado now which puts my working schedule back to 7:30-5. In the dead of winter and for a person who prefers to workout outside, I'm having a hard time finding a time of day that I'm not working, when its light outside and not freezing cold.
We did finally get a Dodge Ram and Fifth wheel trailer and we are basically living in it right now. We are parked at a really nice RV park next to a river and walking path. I miss running, but I have a hard time doing it in this dry, cold climate.
Its a completely different story when it comes to my eating. After ALOT of research and trying different things for a few years, I've finally gotten down to a clean diet of mostly white meats, fish, lots of veggies, some nuts and a small amount of fruit. I've cut out dairy completely and just about all the way with starchy carbs and processed sugars as well. Wheat makes me sooooo sluggish and I just get hungry so quickly again.
I've been doing alot of reading about resetting your body to burn fat and protein for energy instead of carbs and thats what I'm working on doing now.
Breakfast consists of eggs with spinach, chicken sausage, turkey bacon and green tea. I've even cut out coffee which was quite the feat for me!
My husband has also been doing the same diet with me and he is loving it. His energy has been through the roof! My energy and mental clarity has been better as well and I really think my sleeping is getting better as long as I'm extremely careful with what I'm eating.
I keep finding info on the paleo diet when I look up info on the way I've been eating and its pretty inline with what I'm doing. I picked up a recipe book to help me spice things up a bit and it gives a great list of items to always have on hand in the pantry and fridge.
So for exercise, I don't have much space (since we're in a fifth wheel) and I prefer to be outside but its too cold here right now. Whats a girl to do???!!!???
