Paleo eating and loving it!

I haven't been keeping very good track of how long we've been eating paleo, maybe a few weeks by now. I've found alot of great sites with recipes and downloaded a book on my nook with recipes.

Most of the time our meals are simply some sort of meat (chicken usually for me and ground buffalo for the hubby) and some mixed veggies.
Breakfast is usually two eggs, spinach or broccoli, chicken sausage and sometimes I eat 1/4 of an avocado.

Last night for dinner I tried a very easy recipe and made Almond crusted Tilapia.
It was basically wetting the fish with eggs and then covering them in almond flour with a little salt and pepper and frying them in coconut oil.
It was really yummy!

I've been trying to keep my sister eating this way as well but she's having a hard time since she's pregnant and craves things. I'm hoping that after she has the baby and starts focusing back on herself that she'll stick with it for longer so we can see if it helps with her eczema at all.

I just finished up another herbal treatment for a bacterial infection. Interestingly enough, I went to my routine obgyn appointment a few weeks ago and she told me I have a urinary track infection but its bacterial instead of the usual e-coli culprit. She prescribed me some antibiotics but I haven't taken them. I'm going to go in and have her test me again to see if the bacteria that I just treated with the herbs was the same as what she detected.
Antibiotics always make me really sick so I would be very happy to not have to take them.
I can say that I do feel better and the symptoms that I was having are gone. Happy Face! :)

My hubby and I are back in colorado for now until he gets called out again on another storm. My brother-in-law (married to the pregnant sister) is waiting anxiously to either go out with my husband or with my dad. My dad was the one that got him interested in doing this as well but now my dad is offline and doesn't want to go back out for awhile.
My brother-in-law quit his job in anticipation of going out with my dad last fall, but it didn't happen and now my dad is offline. So needless to say, he and my sister are getting a little worried with him being out of work for so long and her due in may with their third child.
I'm totally willing to give up the extra income so that he can go out with us if it comes down to that.
It would actually be alot of fund since he and my hubby have gotten really close over the years and really enjoy each others company.

So enough rambling about that. I'm still enjoying the paleo eating and my husband still thinks I'm losing weight but I refuse to get on the scale, I hate that darn thing!
My guide is how my clothes fit at this point and how I feel and so far my jeans are getting looser and my tummy has been way better so thats good enough for me!
