Getting my week ready

Yesterday I did some cooking, I made enough boneless and skinless chicken thighs, baked with butternut squash, it is so yummy with a bit of cinnamon. I made my big batch of steel cut oats, enough for 2 weeks, I just love this with blueberries and yogurt. Then I made broccoli slaw too, it hold ups better than coleslaw. I have 15 bean soup too. So I should be set with fresh fruits and vegetables. As I explain on most Sundays that I plan for success.
When people ask how I do this week after week I explain that I plan , plan, plan....It makes things so much easier when healthy meals are ready to go for breakfast lunch and dinner, and before you know it it's your way of life, and you don't have to wonder each day what you will eat.
I made extra chicken too for tacos, and wraps. I made mini turkey meat loaves, enough for 5 meals, I make them in cup cake pans, cook then freeze . each one is about 2 ounce, they cook faster this way and freeze better too. it make for handy meals , I can take out 1 or 3 what ever I need for a meal.
I also bake potatoes and sweet potatoes to use darning the week, they are handy when they are cooked already for parsley potatoes, fried potatoes , and they can be mashed too....I like to just warm and eat them that way, Gary likes them for hash browns...
okay enough ...

Have a healthy work, think of ways you can plan your meals a head of time so you don't have to stress after work with the question about whats for dinner, or lunch or breakfast. It sure helps to keep me on track with my eating .....

    I cook up lots of chicken, on bone as its cheaper, then cool it, strip it and bag in portions, its SO handy.

    We plan each day for the week, but somehow we can't seem to do the same for weekends. I gained 4 pounds yesterday from going to a family party - Dad's 70th. Do you do well on weekends?

    Great ideas for me, Kitt!! My problem is that my son hates anything that's reheated a second time. I have my meals planned for the week, but I don't do the big batch cooking. Of course, I work from home, so fixing a home cooked meal each day is no problem for me. I do freeze spaghetti, but it's usually just for me for lunch. I always make a lot of spaghetti so there is always enough to have for supper for me, Rocky, and the two dogs, plus enough leftover for a couple for the freezer.

    I do this too, but have struggled with it a bit the past few months. I must get back on track. I do meat loaf and freeze it, too, but never thought about doing mini ones. I like that idea.

    I'm thinking I should try steel cut oats. I'm sure they are more healthful than the quick oats I use. I went from instant to quick, but haven't yet made the transition to steel cut. Can you tell me proportions for cooking? Have you tried cooking them in the crockpot? You just store them in the fridge and re-heat in the microwave, then top with fruit and yogurt? No sweetener. Sorry I'm so full of questions
