Most of you know I love love love my green smoothies... there are so many different ways you can "sneak" greens into your diet without eating mounds of salad. And - I swear by this - they will give you great energy and boost your overall mood (at least they do for me!). I started with spinach, and experimented with kale and celery as well, and then I stumbled upon this little gem in the produce section:

Power Greens! It's a mixture of baby spinach, baby bok choy, and baby red and green chard. Spinach in smoothies is pretty mild, and I was worried that this might be a little too "bitey" - but it blends very well - plus you get even more nutrients than from spinach alone. Although this is labeled as 'cooking' spinach - I haven't actually used it for cooking yet- just in my smoothies and salads.

Well today, while browsing one of my favorite recipe sites: (warning: there are plenty of non health-friendly recipes linked on this site too, but I've found some really great healthy ideas) I found a recipe for "Green Monster" Hummus infused with spinach, and I can't believe I didn't think of that yet!

I can't wait to try and make some lovely green hummus!

Also, update on my new "finds": I love the Almond Coconut Milk, I think I'll keep this in my rotation of almond milks (unsweetened vanilla, unsweetened chocolate, So Delicious Almond Plus with added protein...). As for the Trop 50 Red Orange - I think I might just prefer the original ... I couldn't taste that much of a difference, and my husband made a funny face when he tried it, so I don't think he's too thrilled with it either.

    "Green Monster" Hummus....where have you been all my life. It's genius! I'm always trying to find ways to get more green goodness into by days and I think you come up with great combinations!

    This sounds like a great mix of greens. I have gotten used to kale green monsters, so this would probably seem mild to me. Hummus in any form is hit in our household. I will have to try one with spinach. The more greens, the better! Thanks.

    I really like these greens too, today I had about a cup of them wilted with my scrambled egg, pretty good and I got greens in at breakfast. Bonus!!

    Still looking for the almond milk it sounds good . i enjoy reading about your food finds anything to add variety to and get our greens in vegetables especially the green ones are hard for me to get. have you tried spinach cooked and then add a two tablespoons of peanut butter mixed in to it
    it sounds awful but it is good . thanks for note on my blog. its still very discouraging to see the zero f for exercise time on my page i did try to ten of some of the chair exercises today will see how the foot feels tomorrow and add a few more minutes know i won;t get the 80 minutes a day i was doing but like you told me once the ankle heals i can start to build up my time again. keep telling us about the great food finds.     Thanks for sharing. Almond coconut milk sounds interesting. I usually stick with the unsweetened original or vanilla. I didn't care for Trop 50 when I tried it but maybe we had a bad bottle. It tasted very chemical to both myself and DH. Glad to know that the red orange isn't that much of a change from the original before I picked up a bottle. I'm hoping now that I have a real blender I can make some green smoothies that will be yummy. Enjoy your new finds!!
