One Day Of Food.

I usually don't do food blogs. But when I was eating this Greek inspired salad today I though why not share it with you.
2 cups Spring Salad Mix.
2 oz chicken breast, diced.
1 tomato
1, 4 inch piece of English cucumber sliced
4 large black olives, sliced
2 ,4 inch pieces of hearts of palm.( Optional )
2 or 3 thin slices of red onion
1 oz. feta cheese
4 cubes of croutons.
1 tbsp. Caesar fat free dressing.

Total calories 236. Fat, 10. Carbs, 17. Protein, 21. Sodium, 1.021.
The feta cheese, black olives and hearts of palm, raised the sodium pretty high for me. But I loved all those ingredients in a Greek salad so I adjusted all my other food in my other meals to keep my sodium under the required amount.
But one can leave out the hearts of palm, and reduce the sodium by 281 gr. Total sodium then 740 gr. for the salad.

Here in Salem, Or. the weather has gotten warmer . I call it salad weather..
Salads and warm or hot weather go together.
When is cool, I want warm comfort food.
I love salads. There are so many things one can add to a salad to make it a filling, tasty meal.
One item I usually add is cheese. In fact I like cheese in or on many foods.
I have to watch how much cheese I eat. There is hardly a cheese I don't like.
Here are a few of the cheeses I have in my fridge right now.

I try to limit my cheese to once a day. And only 1 oz. Guess you could call me the big cheese. If I was given a choice of what food I could take to a deserted island, I would have to have cheese.

Speaking of other foods I have to have on hand are potstickers. I keep vegetable and chicken ones in the freeze at all times.

Over the weekend I made my version of Egg Foo Young, no gravy, and fixed the potstickers, and some garlic shrimp. My BF, Jimmy, said it was the best Chinese food he has eaten. I think what made it so good was we knew exactly what was in the food and how it was prepared.

I started out this morning with 2 scrambled eggs, and a small piece of toast. 5 oz low sodium V-8 juice. 280 cal. for breakfast.
Then the Greek style salad. 236 cal. for lunch
I will have Spicy Thai Noodles with Shrimp , 385 .cal. for dinner.
Night time snack, 1 cup black grapes. 100 cal.
Total for the day 1, 001 calories.
My calories range is 1, 000 to 1.200 per day.
I can't go over 1200 calories per day or I gain. And that's with all the exercise I do too. Go figure. But I really do get enough to eat. I can't imagine eating more.
One thing I don't do is see that I have extra calories left for the day and look for something to eat . Just because you haven't used up all the daily calories, doesn't mean you have too. And it doesn't mean you bank them for another day either.
Unless you have some place to go and you know you are going to really over eat that day., it won't hurt to have extra calories to splurge on some thing really special.
As long as that doesn't become a habit.

It's time for that Spicy Shrimp dinner.

Not that I am hungry, it's only 6:30 pm. It just seems the time I should fix something to eat. If I wait too long, I will get out of the mood and resort to a quick snack. Not getting the proper nutrition that I need.
One habit I kept from living in Miami for all those years and all my jaunting back and forth to Italy, and Europe is eating later in the evening.
I prefer to eat about 9:00 , but don't like to be cooking that late.
Seems I need a chef. Ha, like that is going to happen.

I go through periods of not liking food. I get tired of the same regular foods.
I want variety. I usually turn to eating ethnic foods. Foods from other countries.
Lately I am into Asian. That includes Chinese, Japanese, and Thai.
There is lots of variety , many different styles of cooking and a vast array of ingredients.

In 9 days I will have my 2 year Spark anniversary.
You can bet I will post a blog about that.
So till then, take care.
Stay positive and believe in yourself.

    I love cheese, also. Not a trigger food for me just really satiating. One of my fancy faces is smoked Gouda! Love variety of everything...especially ethnic foods. I get on trends and go with it till I don't want it for a while mad move on to diff favors or back to simple.
    Love to Spark because we all share such a common goal - health, beauty, style, taste buds ....Keep Sparking!

    That salad looked great! I love cheese too and try to only have one ounce a day. i love potstickers too. One of my favorite things. The egg foo young and spicy shrimp look delicious. I also like variety and get bored with the same foods. I wish I were as disciplined as you are.

    Another great Tisha Blog. Thank you for sharing some really good recipes and food ideas. I like to cook so I will be trying some of the recipes, if not all you've shared here. I've always loved cheese and tend to want to overeat it. I justify it to myself as can't drink milk of any sort without a "bad" stomach reaction to it. I'm also looking forward to reading your next blog. Take really good care of yourself.

    Like always Tisha, you gave us another great Blog. I see you eat my kind of cheese too. I really like those Sanoma Jack cheese wedges and usually $1.00 cheaper than WW or Laughing Cow. Thanks for sharing your Healthy eating with us and I am going to try that salad.

    It's salad weather here too! This week I have started bringing my big salads for lunch - not quite as fancy as yours, just a bunch of veggies with a little light dressing. I'm a cheese fan too, but I don't have quite the collection in my fridge that you do. I guess I need to get more adventurous with my food!

    What a fantastic blog. The recipe for the salad is divine!!! Thank you so much for sharing it with everyone. Like you, I'm a cheese lover. Some days I'll just sprinkle some shredded on a salad or another dish. It will total the 1 oz so I can do that. I also love ethenic dishes and I agree with you - when you know the contents and how it was cooked makes food taste better.

    Hi Tisha, I really enjoyed reading your blogs and seeing the ideas that you offer. I have gone back and read several of your older blogs to see what worked for you and get ideas. Like you I love cheese. The salad recipe looks good and I intend to try it minus the black olives and hearts of palm. I need to pick up the feta cheese but no problem. The dinner looks delicious. To be honest I have never heard of Vegetable Potstickers. I am willing to try anything new if I can find it in grocery stores. I know you like spicey and I do not lean that way but recipes can always be tweaked. Tisha thanks for all your support and help.     Yum! This blog just made me SOOO hungry! Good thing dinner's just about ready now anyway. Love that Greek salad and everything else looks wonderful too. I like the occasional piece of cheese too, usually with some sliced apple or a few grapes. It's "salad weather" a little farther down south here too. Thanks for sharing your recipe!
