Quinoa Success

Yesterday my church gathered for a potluck-style dinner. I didn't have much in the fridge, but I had made quinoa (only my second time making it) a few days earlier and done nothing with it. So I added some fresh cut red bell pepper, green onion, zucchini, tomato, olive oil, salt, and italian seasoning. I was a bit nervous about the results, until I tried a bit. Delicious!

I brought it to the dinner and noticed that no one was really that eager to try it. I don't mind bringing something that no one else eats, but I wanted them to at least give it a chance. I put a bit on my plate, then noticed a couple of the women scooping some onto their plates. And love was in the air! People grabbed seconds! Is it ridiculous to feel a bit puffed up about others liking your dish so much that you barely get to bring any leftovers home?

Well, it made me feel very good and proud of the changes I've made. Even a couple months ago, I would have just brought chips (crisps) and left it at that. You can take a look at my nutrition tracker for June 3 and you'll notice that I also had a ton of dessert! But it was worth it!

    It is so versatile. I use it in meatballs, as part of a salad, a side dish with cooked food and green salad and also as a porridge. Good on you for using and enjoying this wonderful food?
