Well, the blueberries added a few carbs I suppose but the actual pancakes didn't. How did I do this? I made coconut flour pancakes. I feel like I died and went to heaven. Coconut flour is very low carb and is high in fiber. I use to bake for my DH all the time because he has Crohn's Disease. It's one of the only flours allowed. I like it better than almond flour (and almond flour is good). If you are interested in recipes type in to sparks recipes pancakes coconut flour. Several recipes there. I'm thinking pumpkin muffins sometime soon. First I have to make sure they don't affect my weight like white flour carbs. They didn't before, but I wasn't exactly watching my weight as carefully.
