Company has left and I'm settled down again. But wait- we leave on vacation tomorrow, and I'm not packed yet. I tell ya, life goes too fast for me. We leave tomorrow night for 2 weeks of diving in the Maldives (it's below India). Our dive group will be spending 1 night in Dubai before we fly on to Malé (the capital of the Maldives). There, we will board a live-aboard dive boat for the next 10 days. The diving should be great, AND it should be harder for me to do my free-range grazing (that's so easy to do at home). At least I'll get plenty of exercise doing 3-5 dives a day.

7 days after we get back, school starts. Where did the summer go? I'm not ready to give up my summer yet, so we'll be trying out our new bar-b-q more when we get back. We've only used it once so far, but I want to try some different recipes. Do you have any healthy, easy favorites?

    Wow! Your trip is a wonderful opportunity for excitement and exercise. I love the beach and think it would be awesome to view ocean life from under the water. Have a great time!

    Sorry, I'm not much a grill gourmet. My grilling is super simple stuff like salmon, pineapple, the usual burger... But I did try Chef Meg's Grilled Garlic Citrus Flank Steak. It was delicious. I followed the recipe other than I cut the meat into strips and froze portions in the marinade as I only cook for two. Then it continued to marinate as it thawed. It turned out quite tender. The only thing I will do differently next time is reduce the amount of garlic.

    Also on another note. Thank you for your comment on my first blog about my pal Clandestine. She's been keeping her distance from me since I let the cat out of the bag about her dealings. emoticon

    Ooh! Your vacation sounds great! Can't wait to hear all about it when you get back!

    My favorite quick grilled meat is boneless, skinless chicken breast. You put the breast in a plastic bag and pound it with a flat mallet to about 1/2" thick or so. Slather it with Italian salad dressing and grill until the chicken is thoroughly cooked.

    Grilled zucchini is also yummy--slice it the long way 1/2" thick, spread with Italian salad dressing and grill for just a few minutes each side until it is heated through but not too mushy.

    I agree--this summer is flying by! We'll be in Hawaii in two weeks for 10 days. I'll have three weeks after that to get ready to go back to school.
