Veggie Challenge - Day 1 of 7

So we did pretty well today. I ate a carrot, a peach and a plum for lunch (also some cheese and almonds).

For dinner, I made bread salad and roasted green beans.

Here's what's left:

3 heads of lettuce
9 heirloom tomatoes (ate 3 today)
.67 bunch of celery (ate .33 today)
0 pound of green beans (ate them all today!
4 potatoes
2 zucchinis
.67 cucumber (ate .33 today)
6 small sweet potatoes
2 heads of broccoli
5 peaches (ate 1 today)
4 pluots
5 plums (ate 1 today)
1 GIANT canteloupe
1.5 red onions (used .5 today)
2 lemons
3 heads of garlic
8 carrots
5 avocados
4 bell peppers
0 bunch of basil (used up today)

Not too bad for the first day. I thought my husband was going to work from home today and eat a big salad for lunch at home. He didn't, so we'll have to make a big effort to work through the lettuce and avocados.

Any favorite recipes that use up a lot of these things? Does canteloupe freeze well? Could you eat all this in one week?
