We all know that we should eat more fruits and vegetables. How can we make it a habit and a fun habit, at that?

A couple of steps can help: Start with availability. Keep the stuff around and begin with the finger food snacks-----dried fruits, grapes, bananas, carrot sticks, cherry tomatoes...... You're more likely to eat them if they are there.

Next, get creative with combinations. Adding hummus, peanut butter or some other still-nutritious toppings can bring a whole new flavor to your foods.

While you are adding fruits and vegetables, keep track of it. Start small and make lists of how much you eat each day. Watching your progress will inspire you to do more.

In the cooler, Fall weather, I love to make vegetable soups. They are different every time because I use whatever I happen to have on hand. I just finished making soup for supper that contained the following veggies: onions, green peppers, rutabega, carrots, tomatoes, and zucchini.
