Back on the Band Wagon - Kinda

So, I full intended to get back on the low carb band wagon today. I ate a ton of wheat products yesterday (rolls, stuffing, pies) and some high carb treats. And with one exception I'm ready to get back on it. I know some people are thinking pies, but no. Sweet potatoes are my big downfall at the moment. In past years I've made mashed, candied sweet potatoes, but hubby wanted "regular" ones this year. So I did that, but made candied sweet potatoes also. Thing is, I wasn't that interested in the candied part. I did put a little brown sugar (splenda actually) in them, but then hit the spice rack and added cloves, nutmeg and cinnamon. OMG they came out amazing!! So, I'm going to be on track with the low carb, but allowing myself that one higher carb treat for the next couple of days. (I had 9 people for dinner, but could have easily fed 20 with all the food I made. On the bright side, it'll be minimal cooking for the rest of the weekend!)

I'm also getting back to gluten free today. I'm not celiac, but have noticed that I feel better overall when I'm gluten free. I was expecting to feel crappy today, but overall I'm doing okay (other than lack of sleep - thank you not at all kitty who decided to wake the house up with her crying over nothing last night). I do have a low grade headache at the moment, but nothing too bad. Overall, things could be a lot worse.

I've cleaned out my flours stock. Tossed out a couple kinds I don't like (soy and garbanzo bean - ugh they smell horrible when they're wet, and the garbanzo bean has a nasty after-taste to it) and labeled everything. The hard part isn't finding gluten free flours for recipes, the hard part is finding low carb gluten free flours. Don't want to replace gluten with junk carbs that'll mess with the blood sugar! Reorganized the whole cabinet also. I'm hoping to make some gluten free low carb bread today. I also would like to get my pantry re-organized. I need to find time to fit in a workout, even if I only get 30 Wii minutes in.

    You go DIL made me some gluten free brownies when we went
    to see them...they were gross, but I did appreciate the effort she put into it.
    She also made gluten free pasta spaghetti...

    I found some gluten free tortilla covers but have to look the company up
    on the net I guess if I can remember the name.

    I, like you, check the carbs in everything, because it is gluten free does not
    mean it is fat free or carb free....quite the opposite sometimes.

    I have found that Walmart and several other grocers are now carrying a line
    of really great gluten free products...

    And in case I did not tell you, in Walmart deli they have a Sara Lee Buffalo
    Chicken and a turkey that are gluten free....and both are good...yum...I use
    leaf lettuce or something like that to roll up the chicken in with some chopped
    zuchinni or tomatoes, whatever I have.....make a good snack.

    And last but not least, our son(in the sandbox now)introduced us to using
    seaweed wraps for fake sushi....I don't do raw fish, but he cooks chicken and
    shreds it finely, or uses tuna, salmon, whatever they happen to have on hand
    with chopped tomatoes, some other chopped veggies, a slice of peeled avocado,
    and they were yuuummmmmmmy.
