Don't do the V8 Fruit/veg drink - sorry maragram- it's loaded with unhealthy ingredients. The only way to eat more veggies is to simply do it. Some things to try- jicama with lime juice, carrots and hummus, bell peppers with hummus or alone. Turn your veggies into your chips have them pre cut ready to go. Often for lunch I eat a slice of sprouted grain bread with chicken, avocado, a healthy serving of spinach and sliced tomatoes. For breakfast I like to add spinach to my eggs. You can do it you just gotta decide how important it is to you. Find creative ways to get them into your meals. Good luck!
