Lots of good food the last few days. pretty much have eaten completely Vegan for the past few days accept for a few slices of gluten free bread here and there which has eggs in it... there are gluten free breads that are also vegan but I already have this bread so its going to get eaten... the stuff is $5+ for a tiny little loaf that is 3rd the size of a normal loaf after all.
I have noticed with this new eating that I am not hungry... I dont feel the need to snack all the time and also I have noticed that I am thirsty which is really weird for me because I am the type of person who is never thirsty and has never been thirsty. I have always had a huge problem drinking enough water because my body never tells me I need it. I can go all day with no water and then I may realize at the end of the day that I have not drank anything all day so will have a glass of water. I actually desire water throughout the day now... I dont know if this is a thing... If maybe processed food blocks thirst. Its odd.

Wednesday 7/23

I worked out on the elliptical for 30 minutes while watching extreme weightloss... Love that show! took a shower and got breakfast.

I burnt my darn english muffin! uhg. Most ppl would throw away and start over but my gluten free english muffins cost near $7 when not on sale so I scraped the black off as best I could and put a little raspberry jam on. apple has natural peanut butter on it which contains only peanuts (fancy!) lol... and had the last coconut yogurt which I stated before I dont care for but its there, its paid for, Im eating it.
I didnt track so I dont know how many calories but I did measure the peanut butter which was only a 1/4 of a serving.

Lunch was really yummy. Made a portobella mushroom "burger" fried with some worcestershire sauce topped with avocado and lettuce on gluten free bread. had a few polenta rounds and some carrots and hummus.

Went out with my sister to this grocery store called earth fare. I was looking for nutritional yeast for a pizza I was making for dinner because I herd you could use it as a vegan cheese substutute. They had some in the bulk bin but it was surounded by wheat flour which had migrated EVERYWHERE! There was no way I was going to risk eating that. I ended up finding it pre-packaged but it was processed in a packing facility that also manufatures things that have wheat in them so again I was not willing to take that risk. I ended up buying some vegan shredded mozzarella and some vegan parmesan instead which was actually not badly priced at about $3-$4 a container which is very close to regular cheese products.
I got Archer a bag of puffed organic dinosaur snacks because I knew he would start throwing a fit on the 30 minute drive back home. I opened them up in the car and they were waaaay too crunchy for him to eat... I would say they felt more stale than anything else but I dont know how they normally so I cant really say either way. If they are ment to be that crunchy then they suck, really bad! Luckily I bought him a pack of freeze dried apples as well which held him over.
I ended up eating at least a serving which was about 140 calories or so... they were not good... why did I eat them?

Dinner was a bit disasterous. I made pizza with a polenta crust. I have made it before and it wasnt bad. This was like 2 years ago when I first went gluten free. Well my sister found a recipe online for it and the lady that posted it said to bake it for 10 minutes and then top it with ingredients and bake it for a bit longer to cook the toppings. Looking back on when I made it before later I realized I baked it a lot longer in the beggining to crisp the crust.. like at least 30 minutes. I didnt think of that though and followed the directions at hand which were to add 1 part corn meal to 2 parts water. cook the hell out of it while stiring constantly till it was reeeeally thick. I got quite the work out on my arms.... wooo!

Then I took the mix and spread it on parchment and baked it for the recomended (too short!) time of 10 minutes. Then we topped it with toppings, veggie cheese and such and put it back in the oven for another 12 minutes or so

The result was a big soggy mess that once the toppings were on it was pretty unfixable. My kids were not happy with me at all :-( It was edible but only because I am an adult and I made that crap so I put my big girl panties on and had a few slices along with a salad. it wasnt good but it was a learning experience. I made the kids a sandwich lol.

later I laid in bed with my sweetie and we watched Master Chef together while I had a few peices of reeealy super dark chocolate (which I loved, and he didnt care for) and drank fancy tea from teavana. I try to pick up a few loose teas every month... Its my not guilty, guilty pleasure :-)

Thursday 7/24

Yesterday I didnt work out, instead I spent most of the morning and afternoon cleaning my room. I got some other house cleaning in but it was mostly tackling the disaster that is my bedroom or should I maybe call it a clothes hamper? In any case it was horrible and I wasnt feeling relaxed and organized and put together. The state of my home directly reflects my mood and emotional state and vice versa. I have found if I can keep my home somewhat organized and clean I am a much much happier, and put together person. When I had gotten so depressed the last few months I really let the house go and in turn the house would end up making me feel worse to the point where I didnt even want to get out of bed in the morning and face the world. I got the kitchen really good to begin with and that has helped me so much. I ended up cleaning out the cabinets doing a really deep clean and that made me feel so much better. So I knew my room being clean would help me feel that much more better. It took a while but now I can sit and relax at the end of the day or just get away for a few minutes in the middle of the day when the kids are driving me up the walls. Makes my soul feel happy.



Breakfast was eaten on the run... I scarfed down a bowl of honey nut chex with almond milk and didnt take a picture and about 2 hours later I was starving because chex is a really crappy cereal because it has no staying power but its gluten free which is why it was in the house. I need to make some granola or something since I cant find a good gluten free cereal that has staying powder. Had a mid morning snack of one peice of gluten free bread with unsweetened apple butter and a clementine.

Lunch was really good. I put 1 cup of rice on the plate and had this urge to put more but I knew there was going to be a lot of veggies so I didnt. one cup was enough and I was super full afterwards and it held me over till dinner. so yummy!!! omg.
1 cup of rice topped with black beans, sauteed bell pepper, mushroom and onion with salsa, lettuce mix and avocado.

Dinner I ended up making the rest of the family pasta with alfredo sauce and carrots, peas and broccoli. I had the alfredo sauce up there and its gotta be eaten so thats what they had and they were really happy with it. I guess a nice change from the pizza disaster from the night before. lol.
I cant have the dairy anyhow so I took a little bit of the gluten free pasta from they're dish before adding the sauce and instead made some sauteed broccoli, bell pepper, carrot, peas, onion, mushrooms and sundried tomatoes tossed with fresh basil. I sprinkled a little bit of vegan parmesan cheese on it once I plated it. I didnt miss the cheese really. It had a lot of flavors going on and was really good. I dont think most of my family would have minded it either accept for my 9 year old son who is really not that keen on very many vegetables.

I am feeling so in control this past week. I am loving it!
