Challenging myself

Ok, so it has been a couple days since my last blog. I have been so busy moving my son, checking on my brother, and making my youngest son a bedroom all of his own. Just need to paint and hang the wall hanging we made and the letters to his name on the wall and we are done with that room! As I go through things in the house I will get everything to my oldest son too.

My challenge to myself. DO NOT GO GROCERY SHOPPING THIS WHOLE WEEKEND OR WEEK UNTIL FRIDAY NEXT WEEK. I have a freezer down stairs, and a frig and freezer up here with a pantry and a rack on the door to my basement. Mostly filled with fruits and veggies. This will be a great chance for me to lower my calories! Making sure I cover all nutrition we all need, I challenge myself to make meals and snacks from the things I have in the house already. I have beans, boca burger, chicken, veggies, fruit, low carb tortillas and so much more. It will be like hunting for treasure! AND challenging myself to be creative. I can think of 4 days worth of meals off the top of my head. And this is a good time to get used to more frozen foods that will be plentiful during the winter in my house. Most of the time I try to use fresh foods.

Well, off to my weekend of continuing to explore my house and re do the rooms! Busy weekend ahead!
