I love this time of the year. The beginning of crisp air and the harvesting of summer crops. I love the costumes and the excitement of the children as they get ready for the festivities. Bobbing for apples, pumpkin carving...I love the fun!
Pumpkins are my favorite fruit. We save the seeds and roast them. I bake the pumpkins after they have 'starred' in the decorations and have a supply of yummy pumpkin puree to use throughout the coming year. I freeze the puree in l cup portions so they are ready for any recipe.
It is also a time to remember those who have gone before us. It is a time to honor their contributions to our healing journey and be thankful for the time we had with them. Today, I am well. I am Blessed. I am ready to dance and play.
Oh, and I am staying close to the shredded carrots and pumpkin seeds.
Here comes some 'eye' candy...(less calories).
