A Good Day For Soup........
Saturday, January 31, 2015
When I woke up this morning, it was cloudy and the temperatures had fallen much lower than they were yesterday morning, and the forecast includes a possibility of up to 6 inches of snow. All of these things SCREAMED: Make some homemade soup!!!!!
So I did..............
I had fried onions in a small amount of butter and added stew meat. The stew meat looked good enough to eat raw.........it was round steak cut into very small pieces. Then I peeled and cut up carrots (into fairly big chunks), and added them to the onions and meat, followed by zucchini (I found some very small zucchini yesterday, the kind that are very tender and yummy). I then cut up a small rutabaga into bite-sized pieces and added them plus diced tomatoes with rosemary and basil and celery. The final addition was barley. The juices were from the meat, vegetables, and added beef broth. I am smelling it now and it really smells good. I can hardly wait until supper.
Our nephew drove up to a ski hill about 18 miles from us (he lives about 150 miles south east of us) and will join us for supper, so I hope that the soup tastes as good as it smells. If the snow comes early, he may spend the night.
Have a great "Rest of the Weekend" everyone!!!
