Day 570: Friday Update

I had about two cups of cut-up (raw) butternut squash in the fridge from the other day.

Instead of looking through the recipe site I posted (of course) I thought, wonder how that would taste if I gave it the sweet-potato treatment?

I've been seeing a lot on the 'net lately about "baked sweet-potato fries." Well, I've been making them for years. I cut up the yams, toss them in a bag with curry powder, bake at 400F (200C) for 20-30 minutes, depending how thick I've cut them.

Now, I've become a real fan of curry powder - I don't get the hottest, but I do get an intermediate level that can be quite warm.

So: I put the cut-up chunks of squash (cubes about 3/4" square) in a bag and shake them up with curry powder and just a leetle touch of olive oil. Baked them for 35 minutes, as it turned out, till they were soft when I poked them with a fork.

Oh, I'm here to say - beta carotene, fiber, low-cal, and no spikes to the blood sugar. I'd have that any time!
