December 8--Tuesday at home

Breakfast was a rather large salad, simply dressed with a little balsamic vinegar, and I had one of out homemade wheat bagels with cashew cheese and avocado, and as always, coffee.


Not terribly hungry today after that bagel, so I just did some snacky things. I had this pretty little plate with my homemade vegan cashew blue cheese, a few walnuts, a couple of crackers, and grapes. [That cheese is amazing!]


A bit later I went down to the freezer where I have my holiday goodies socked away. I cut them up into tiny pieces before storing them, so I can have a few. This was a little square of gingerbread, a little linzer bar, and a little gluten-free brownie.


Later I had a serving of the potato "omelette" I mentioned earlier today.


I had a good workout this morning, and had a full 2 quarts of water thru the day.Even though I didn't get much protein today, I feel really good about today's menu, even the sweets!
