Today, I had a long run of 11 miles on the schedule. I woke up to rain and thought... oh boy... I should have done it yesterday while I had the chance. I basically wasted a bunch of time, had breakfast, decided to make a big pot of chicken/vegetable/rice soup and see if the rain would stop. Checked the weather app on my phone and it indicated 75% chance of rain but should be okay this afternoon. Around 10:30am, the rain stopped so I decided to get the first 6 miles out of the way and then come home for a break and have lunch. I have finished Season 1 of the Serial Podcast on Pandora so I listened to one of my running mixes. Enjoyed the run and didn't get rained on.. yay!
Had lunch and looked out the window... raining again. Weather app was obviously not spot on. I needed to get the other 5 miles out of the way so decided to give it a go. Pretty much rained the entire time and I got soaked. While I was running, I just told myself that training in the rain is a good thing as you never know what type of weather you will have at events. It slowed me down, but I got it done and was proud of myself.
Fixed the DH and I a protein shake and took a quick hot shower. I have to work tomorrow and Tuesday so decided to prep some chicken. I haven't been happy with the bag of frozen chicken I got at Costco, but since I had the last 3 pieces thawed I didn't want to waste it. I recently had seen a recipe for baked chicken nuggets and thought that sounded interesting so decided to give it a try. I didn't have panko on hand so I subbed Italian seasoned bread crumbs and omitted the thyme the recipe called for. The chicken nuggets turned out really tender and tasty and I give this recipe 5 out of 5 stars. Next time I make chicken fillets I'm going to use this method. I think you could even get chicken prepped and breaded and re-freeze. Baking them on a cookie sheet (like a fish stick) would make a quick and easy dinner. Next time I'm going to dip the chicken nuggets in marinara. Here is a link to the recipe if you are interested.

Did okay with my eating today. Managed to stay away from the crackers so that is a small victory. I've decided that my mantra for next year is going to be "Get Lean in 2016".

Sliced Pear
3/4 c warmed applesauce with 1/4 c berries & dollop of FF whip

Afternoon Snack
Protein Shake with frozen banana / almond milk

Dinner
5 ounces baked chicken nuggets
1 cup mixed sauteed veggies (sweet potato, onion, garlic, carrots)
3/4 c warmed applesauce with 1/4 c berries and dollop FF whip

Evening Snack
Popcorn
