Cheese & Bread

I've recently toyed with the idea of taking my 21 years of vegetarianism to the next level, and for health reasons, eating a vegan diet instead. I've read a lot about making the transition. The suggestions that make the most sense for my life are to take it one step at a time...eliminating one thing at a time from the dairy, egg, honey list.
Without deciding to completely go for it...I thought I could definitely try cutting out cheese first. I LOVE cheese, but it does not love me back... in fact, it is not very kind to me at all. I have kicked it to the curb before, but one more shot was worth it.
It is one of those foods that once I have some...I want more and more of that creamy, salty goodness. So, not having any is WAY easier than having "just a bite." I have been "off" cheese for just about 2 weeks...and there has been an added and unexpected benefit...
...SO MUCH LESS BREAD!
Bread and cheese go together. Period.
Pizza. Grilled cheese. Cheese and crackers. Pasta and cheese. Every casserole from my childhood. Heck, cheese danish, bagels and cream cheese. Cheese sandwiches. Cheese bread sticks. I could go on and on...
Without my "go to" cheese, I have not really missed its handy companion - bread.
I feel lighter and better.
I like that a lot!
