I have got to say, I am feeling like a rock star today! My fasting blood was 104! That is an amazing come back! I realize it will fluctuate, but getting back down was a big win.

Busy day today. I was inspired to put some "recipe" cards together to keep my brain organized as to dinners that are working well for my blood sugar. I usually don't have issues with breakfast or lunch. Just the evening meal and after that. So, to log onto here in case I lose my cards...

Fajita with eggs and lettuce wraps

I put meat optional on some because my hubby and son eat meat. I am not fully against eating meat but try not to eat much of it. I usually will sub a meatless product, tofu, beans, eggs or skip it. I try to make sure protein is in my javascript:void(0);meals.

I also started poking around at sugar free ice cream bases. So far I found a vanilla base and a ginger base that sounds great to have some pineapple, pear or peach added into it.

I also found a tip on hard boiled eggs. 350 degrees raw egg in shell in each muffin tin holes, bake for half hour. Should come out less firm but solid. Place in cold water to cool down and peel. I shared this tip with my son who is educated to be a chef, and he thought it was a very interesting technique. Figured I would share some of the sparks in my brain!
