Well some bug has been making its way through each person in our house. First me, then my youngest, today it seems like my pup isn't feeling too great. What a way to wake up! I stepped in his vomit at the top of the stairs, then saw he did it again at the bottom of the stairs and my youngest informed me he did it in his room too. Pup (Halo) has been sleeping all day and when he isn't sleeping he is batting at me to pick him up and hold him. Poor guy. I am sure he will feel better tomorrow.

Spring break around here so people have been in and out. Working and off work, in school and off school. Hubby and I tackled some big projects over the past couple days and it feels great to get those things knocked out. I still have some finishing up to do.

I stopped and realized Easter is on Sunday! I remember my hubby mentioning how he would like me to make a ham for Easter. I can do that. But my main focus is low carb and veggie based dishes. We watched this show I ran across a week ago which is called " How to live to 100". Well hubby watched it and it was on the benefits of cauliflower. Boy oh boy is hubby a fan of cauliflower even more now. It is nice how he is realizing the way I need to eat is very good. He actually said he is realizing his mom's Thai food she made growing up was actually very good for him. She is unable to make it any more, nor is she able to go back to her homeland of Thailand. I am grateful she taught me some of the main things she always made. I never took an interest in her Laap. But I imagine it is made with tons of Thai chilis. As hot going out as coming in! I am sure she is able to tell me still if I asked. Anyway, back to dishes for Easter. I have decided that even if no one shows up for dinner because of work or whatever, I am going to make what I am going to make and it will be enough for all if they were to show up and if they don't it will make great left over meals in frittatas.
Hard boiled eggs
deviled eggs
Ham- upon request lol
dill creamed peas and onions
roasted onions, beets and carrots
cauliflower scalloped/au gratin haven't decided which yet
***I would love to think of other low carb veggie dishes, if you know of any please share***
dark greens salad with carrots, cukes, radish, pea pods, tomato, red onion- colorful
dark green salad with onion, fetta, white beans, almonds, oranges-think I am forgetting ingredients in that salad oh~ craisins maybe?
and the desert I think of is a
strawberry meringue layer "Cake" Crisp meringue layers with strawberries and cream. Beautiful, colorful and yum! And in my way of eating so I can enjoy too!

Well those are all ideas so far. I will most likely change things up. Maybe I will try the whipped cauliflower in place of mashed potatoes. We will see! Before all that, boiling and coloring Easter eggs!
