How I cook in the truck

Lots of people, including other truck drivers, think that there's no real way to east health while on the road unless you choose the health smart options at your local truck stop but that's not true. There are many options in the truck using either your cigarette lighter or other ports or if you have an APU like we do there's many household appliances you can use. Without an APU drivers buy mini crock pots or electric lunch boxes with foil liners to heat their food. Coolers with ice are used instead of fridges so they're very limited.

We have a dorm size fridge, crock pot, coffee maker, electric skillet and a grill. We shop at Walmart because there really the only place that let's truck's park to shop. We shop Tv's perimeter of the store gathering our fruits, veggies and meat. We also buy 8 to 10 gallons of water, lysol wipes for dishes, paper towel and other incidentals as needed.

I cook most everything in the crock pot and re warm it in the electric skillet. I love making fajitas or BBQ pulled pork or chicken and jambalaya or red beans and rice. We tend to have eggs for breakfast with cream of wheat. Since DH had gastric bypass surgery recently most of what I make is for myself right now. At this point in the recovery he's eating about 3 tablespoons per meal. Two tablespoons protein and one veggie. He's also working out, drinking protein shakes as allowed and v8 to get in more nutrients. He's doing awesome and I'm proud of him.
