Out to catch some vitamin D

1/5/2017. Yesterday was the first day this year that wasn't raining. When I saw some color other than gray in the morning sky, I took it as a good omen. Not complaining, because we need the water, but I also needed some sunshine. So, my dog and I went to the park and walked 6k in an hour. A car stopped by and the lady said,"That sure is a happy dog. His tail is wagging nonstop!" I guess he was happy to go for a walk at last. If I had a tail, it would be wagging too!
I had good energy all day. I baked a rice custard pudding. I adapted the recipe to use brown rice, nonfat milk, coconut oil in place of butter, and reduced the amount of sugar. Then I baked a tsimmes. That is a mixture of roasted sweet potatoes, carrots, apples, prunes, apricots, orange juice, honey, and butter seasoned with nutmeg and cinnamon. Packed with nutrition, tastes great, and makes the house smell wonderful!
It is cloudy today, and snow is predicted for tomorrow. So dog and I are off to the park for a walk worth wagging about.
