Meatball Sub-stitute

The family wants meatball subs for dinner. OK, so instead of heading to Subway, we'll make them at home. Classico's marinara sauce is lower-calorie than other sauces (even their cream sauces are not so high in carbs or fat, plus they're higher in protein than the competitors). Provolone cheese and a sprinkling of Italian seasoning will top my dinner, but I'll be skipping the mozzarella. I'll saute mushrooms and onions in a little olive oil. Fresh peppers, sliced right out of my garden. Fresh tomato slices, from the farmers market. Oh, and black olives -- must have these!

Instead of a hoagie roll, though, I'll have a bed of brown rice. Will weigh meatballs on the food scale to be sure of how much to serve myself.

Everything has been plugged in to the SP Nutrition Tracker. All nutrition levels have been met for the day, and only a little over calorie limit.
