As We Start Our Two Week Experiment...

I am nervous, but excited.
I feel like vegan/vegetarian diets are good for you, and better for the environment, so I am definitely curious to see how difficult this is for us. However, there are certain things I am not looking forward to, like trying to find a milk alternative for my coffee and tea.
I told my husband that if this is something we want to continue for more than 2 weeks, I am going to have to do research and get things that really work for me. I don't want to be unhappy drinking tea/coffee, because I do really enjoy them.
My husband wants to see if he feels different eating a vegan diet. And to be honest, I am curious if we will as well. I know my body has an awful time processing lactose, and I know how badly it hurts my stomach, so it will be interesting to see if this makes my stomach issues go away.
A lot of the food we are eating, is so similar to stuff we eat day-to-day, that I am not terribly concerned about it. Predominantly, we eat chicken if we eat meat, and I would say at this point we are maybe 30-40% of our meals vegetarian anyway! However, the dairy is a big hit on me. I eat yogurt at breakfast, I have 2-3 tea/coffee throughout the day with milk, and the cheese, oh man, how I love cheese.
It's two weeks. My husband said the documentary he watched said that most of the people being interviewed started feeling better after two weeks, but he is not opposed to doing it longer if we think we'd like to give it some more time.
So yeah, excited and nervous.
