So day one (of going vegan) has been interesting..
Cashew milk in my coffee this morning wasn't a good call. I really didn't like how it tasted at all and it made me not like my coffee! I'm going to figure out whether I want a different milk alternative, or if I want to drink it black.
I've been REALLY bloated today. Now, we didn't eat great on the weekend, but I feel really uncomfortable. Hopefully this goes away after a few days.
Tonight is a veggie curry, with potatoes, chick peas, and peas! I will be taking it for lunch tomorrow as well.
I'm curious to see how this all plays out.
I wasn't hungry, and actually, I had too much lunch!
I'm not sure I can do leftovers for two weeks. I definitely have to reduce the amount of food I take for lunch, and I don't think my diet will work with these meals, but I will see after this week! If I gain, then I will stop doing the leftovers, and change up my meals.
So here's to day one!
