Day Two of Vegan

I decided to forgo the cashew milk today and go black with honey (yes, some people do not include honey in a vegan diet, but I'm okay with it), and it wasn't terrible, but I miss having SOMETHING in it. However, hubby picked up some coconut milk on the way home today, and I am currently having a tea and it's not terrible!
Still feeling bloated. Not sure if it is the carbs we've had the last few days, or my body just adjusting, but I haven't been feeling too great.
Tonight is a Thai Coconut pasta, and I am curious to see how it is!
I realized that I am going to have some interesting challenges through this. Like on Thursday, I have a full day conference, and they are feeding us, but I have no idea if they are going to have things for me to eat! Should be interesting!
