One Week Of Vegan Diet!

So I am one week in, and it was good, and bad, and I am curious to see how the next week goes!
Last night we went to our friends' place for tacos, and they made/bought a ton of vegan stuff. The bad thing is that I feel TERRIBLE today. Like gas for daaaays. I cannot believe how bad I've felt since last night. So clearly something in that food just didn't work for me. I'm still not feeling well, even now.
Meal list this week:
Sunday - Vegan Pizza (we are ordering out for the first time on vegan diet, so that's exciting!)
Monday - Curried Spaghetti Squash
Tuesday - Spicy Peanut Noodles
Wednesday - Tofu Stirfry
Thursday - Chickpea and Mushroom Curry
Friday - Hubby is going out, so I'm not sure of my dinner
I am looking forward to this week. I've changed around my meals during the day. So meals are:
Breakfast - Fruit and Sunflower Seeds
Lunch - Veggies and Hummus
Snack - Harvest Snap (Baked Peas)
That removes a ton of carbs, so I am curious to see how I feel this week.
We are going to see how we feel after this week, and we might even go for a third week, but we will see.
I find that eating vegan at home is a lot more convenient, we don't have to worry about pulling meat out, or really eating anything frozen. However, I find that snacks and treats at home are less convenient. The coffee/tea in the morning is really frustrating, but I did a better job later in the week. I think I might try and treat myself with a soy latte or coconut milk latte one day this week.
So on to week two!
