Here are some recipes that are really good, easy and kid friendly. The recipes are from Once a month cooking. So the directions are going to be for the monthly cooking. YOu may have to adjust the directions, NOT ingredients, but adjust how you cook, freeze etc....
Chinese Chicken Morsels
1 lb. boneless, skinless chix breast (2 cups)
1/4 cup dijon mustard
2 tsp veg. oil
1/4 tsp cayenne pepper...or to taste
1/2 cup lemon juice
1/4 cup reduced sodium soy sauce
1 cup regular uncooked rice
Cut chix into 1 inch cubes. Make the Marinade combining lemon juice, soy sauce, mustard, oil and pepper. Put marinade and chicken cubes in a 1 gallon bag and freeze.
To prepare for serving, thaw chicken and remove from marinade. Warm marinade in a small saucepan. Place cubes about an inch apart on broiler pan treated with nonstick spray. Broil 4 to 5 inches from heat 7 mins, brushing with marinade once. Turn chicken cubes and broil another 4 minutes. Meanwhile, prepare rice according to package directions. Heat remaining marinade and serve over rice.
1 loaf frozen french bread, italian or all purpose bread dough
1 lb. lean ground beef or ground turkey
1 tsp salt
1/2 tsp pepper
2 cups part-skim mozzerlla
1 tsp italian seasoning
1 tbsp chopped parsley
4 cups pizza or spaghetti sauce
Thaw dough, roll into 14x24 inch rectangle 1/4 inch thick. COok ground beef or turkey until brown, about 10 minutes. Drain fat. Stir in remainig ingreadients except sauce. Spoon filling evenly onto dough, slightly pressing filling into dough.
Roll out dough lengthwise like a jelly roll an cut into 24 1-inch slices. Treat 2 rimmed cookie sheets with nonstick spray, lay slices on sheets about an inch apart. Preheat oven to 400 degrees. Let roll-ups sit for 10 minutes. Bake for 20 to 25 minute or until golden brown. COol and freeze 4 1 gallon bags, 6 per bag. Slip 1 quart bag with 1 cup sauce into each bag of pizza roll ups. To prepare thaw roll-ups and warm them in a peheated 400 degree oven for 10 minutes. or put them in frozen in the microwave, heat on high for 2 minutes. Serve with warmed sauce.
