What is that?! Why, it's a big slab of steel! Maybe you've heard about baking stones. Well, this is a baking steel. It holds heat better than a stone and is virtually indestructible. I had baking stones back in the day and I stopped using them because I needed to baby them too much. Not so with this monster. It came from a steel factory not too far from my home. The light of my life heard about them on a local TV show and suggested we get one. What, drop $130 on a hunk of metal? To bake on?!!
But like usual, he was right. It makes the best pizza! And the model we got can flip over and become a griddle. I can cook four eggs (in egg circles - more in another post) and two sliced english muffins on the griddle side, it's that big. We don't have a gas grill, but I can turn out grilled hamburgers on this thing that are mouth watering. Or at least, they make my mouth water.
There are a few drawbacks to this beauty. At 3/8" thick, it is heavy. Like 25 pounds worth of heavy. It's a workout hauling this thing out of the oven and into the sink to wash it. If I were to drop it, it would shatter the tile in my kitchen. It also takes 45 minutes to heat it up to bake pizzas on it. That said, I wouldn't trade it for a dozen baking stones. The stones have their place, but this is my favorite baking slab in the kitchen!
