Daily Highlight 262 - Spaghetti Squash

Highlight -
Do you have a favorite recipe for spaghetti squash?
I roasted mine whole at 350 for until tender. (about an hour) Used a knife to pierce the top several times to vent before going in the oven. Let it rest for a bit (15 minutes) so it is a little cooler to handle. Cut in half stem to blossom end, and in half again. Remove seeds from the quarters. Use a spoon to remove the skin from the strands, then a fork to separate the strands.

Served with meatballs and sauce for the guys. Mushrooms and sauce for me. Top with freshly grated parmigiana cheese.

    LOVE it with some olive oil, garlic and onion powder, topped w/parmesan. Could use butter vs. olive oil, too. Really, any kind of spice you like. And Alfredo sauce is another option (I do make my own that is lower in fat and calories)..

    Sounds delish!!! But . . . I haven't tried it . . .

    My pasta default dish these days is . . . black squid ink pasta with lots and lots of veggies and shrimp and Parmesan. Made it Sunday evening and it looks spectacular on my bright red dinner plates!!

    My hubs is a pasta guy, and he even enjoys spaghetti squash. Our mid grand despises her world, gimme the real stuff any day. I usually serve it as you do, I typically roast the seeds right beside it. Tossed in some pesto is also delish... 😋

    Only tried it once. We like zucchini spirals and they are easy. You can even find them in the frozen section. I use it in place of pasta.

    Can also toss with a little olive oil, herbs, pepper and parmesan cheese for a nice side dish (a la buttered noodles). Enjoy
