Daily Highlight 262 - Spaghetti Squash

Do you have a favorite recipe for spaghetti squash?
I roasted mine whole at 350 for until tender. (about an hour) Used a knife to pierce the top several times to vent before going in the oven. Let it rest for a bit (15 minutes) so it is a little cooler to handle. Cut in half stem to blossom end, and in half again. Remove seeds from the quarters. Use a spoon to remove the skin from the strands, then a fork to separate the strands.
Served with meatballs and sauce for the guys. Mushrooms and sauce for me. Top with freshly grated parmigiana cheese.
